Bacon and Spinach Salad

Continuing our spinach theme we move on today’s recipe. Fans of stronger and richer taste will love this salad due to the great tasting bacon in it. I must admit that the recipe is from a great restaurant located in Sofia, namely Club of the Architects. If you are ever in town, it’s a must visit.

Ingredients
- 50 g baby spinach (≈ 2 oz)
- 5-6 slices of smoked bacon
- 1 tomato
- 1 Tbsp Parmigiano-Reggiano (Parmesan) cheese
- Sea salt + black pepper to taste
- Apple vinegar + Olive oil to taste
Instructions
- Wash and clean the baby spinach. Remove the stems and let it rest in a bowl of your choosing. Once reasonably dry, cut the spinach length-wise in thin slices.
- Remove the skin and dice the tomato into 1cm (≈ 1/2 in) squares.
- Dice the bacon into squares as well and toast it in a pan until crispy.
- Add the tomato and bacon to the spinach.
- Season to your liking using the salt, pepper, vinegar & olive oil.
- Enjoy!
